INGREDIENTS
3 large eggs
1/4 cup minced pork
1-2 tablespoons fish sauce or soy sauce (to taste)
A pinch of white pepper
1/2 cup cooked jasmine rice (for serving)
Oil for frying (about 2-3 tablespoons)
Optional: sliced green onions, chili, or sriracha sauce for garnish

INSTRUCTIONS
- Prepare the eggs: Crack the eggs into a bowl, add fish sauce or soy sauce, and a pinch of white pepper. Whisk until well combined and slightly frothy. The whisking process will add a fluff to your Thai omelet with minced pork.

A quick note on making your minced pork omelet in a non-stick pan. While this does sound interesting, we have tried it a couple of times and would suggest that you use at least a spoonful of oil. The flavor of the Thai omelet seems to change, when absolutely no oil is used to make it. It seems to get a roasted flavor. Once again the decision is your personal choice.
